How to Scale a Recipe by Pan Size
Changing from one baking pan to another is not the same as changing servings. The useful starting point is pan surface area: compare the total area of the original pans with the total area of the pans you plan to use, then scale the ingredient amounts by that ratio.

Compare pan surface area, not diameter alone
A round pan uses the formula π × radius × radius. A square pan uses side × side, and a rectangular pan uses width × length. Because round-pan area grows with the square of the diameter, moving from a 9-inch round pan to a 13-inch round pan is a little more than double the area, not a 44 percent increase.

Include the number of pans
Count every pan that receives batter or dough. A layer cake written for two 9-inch pans has twice the total surface area of a recipe written for one 9-inch pan. If you compare only one pan on each side, the ingredient conversion can be wrong even when the dimensions are entered correctly.
The same rule applies when moving from one sheet pan to two smaller pans. Compare the total area of the complete original set with the total area of the complete new set.
Keep pan depth reasonably similar
Surface-area scaling works best when the original and new pans have a similar depth and you want a similar batter depth. A much deeper pan changes how heat reaches the center, while a very shallow pan spreads the batter and may bake much faster.
If the new pan is substantially deeper or shallower, treat the calculated amount as a starting point. Avoid filling a pan to the rim; leave the headroom the original recipe expects for rising, bubbling, or expansion.
- Similar depth: area ratio is usually a useful ingredient starting point.
- Deeper pan: expect a slower center and check that the pan is not overfilled.
- Shallower pan: begin checking earlier because the batter may set faster.
Do not multiply baking time by the scale factor
Ingredient amounts scale with area, but baking time does not. Keep the original oven temperature unless the recipe or pan material gives you a reason to change it. Start checking before the original time when the batter is shallower, and allow more time when it is deeper.
Use the recipe’s doneness cues: a set center, golden edges, springiness, internal temperature, or a tester that comes out as described. Those signals are more reliable than multiplying the original minutes by the ingredient factor.
Review ingredients that need practical rounding
A pan-area factor can produce awkward amounts such as 2.09 eggs or a very small change in baking powder. Weighing ingredients is the most consistent approach for baking. When whole eggs must be divided, beat one egg and measure the needed portion rather than rounding every fractional result automatically.
Salt, strong spices, yeast, baking soda, and baking powder deserve a final check. The converter keeps the mathematics consistent, while the baker still decides whether the rounded amount makes sense for the recipe type.
